Cocoa Banana Bread
This quick bread muffin recipe makes two loaves, or six mini loaves.
Unsweetened cocoa powder
2 ½ cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
¾ teaspoon salt
1 ¾ cups sugar
½ cup vegetable oil
3 large eggs
1 ½ cups mashed ripe bananas (about 3 large)
1 cup chocolate chips
Preheat oven to 350 degrees. Generously grease loaf pans and dust with cocoa powder. In a medium bowl, stir together flour, 1/3 cup cocoa powder, baking soda, and salt; set aside. In a large mixer bowl at medium speed, beat sugar, oil, and eggs until blended. Add bananas and beat until well blended. At low speed, beat in flour mixture just until blended. Stir in chocolate chips. Fill loaf pans two-thirds full. Place on baking sheet. Bake at 350 degrees for 1 hour or until a tester inserted in the center comes out clean. (If making mini loaves, bake for 25-30 minutes.) Cool in pans on wire racks for ten minutes. Then remove from pans and enjoy while still warm or let cool completely.
